Since this is somewhat of a popular question, I thought I'd make a single post with instructions for both.

How to record a movie:

Open Nestopia and start the game you wish to record. Once the game is running, go to File -> Movie player -> File. Now you can name the file if you wish, but if you simply click the Browse button, you will see the file will already be named (same as rom name) and will be saved to the state folder in the Nestopia directory by default. Start the game and go back to File -> Movie player and select record. When finished, just go back and click stop.

How to export to .avi:

Open Nestopia and start the game you made a recording of then go to File -> Movie player -> File and select the .nsv that corresponds to the game. Go back to the movie player and notice the export to .avi is now selectable. The conversion process will take some time so be patient. When the conversion is finished, the .avi will be found in the State folder of the Nestopia directory.

Hope this helps smile

Thank you so much for this!
I trawled through about 16 pages of threads looking for this answer until I was linked to it. laugh

Nestopia's AVI export seems restricted to 1GiB files, even though it will claim the export has finished. This is a rather low limit to reach and you can easily hit it with only a couple minutes to a lossless codec smirk

NST has no limitation of it's own, but e.g. FAT32 filesystems will limit between 1 and 2 GB.

FAT32's limit is 4GiB and I was using it on an NTFS drive anyway. :P

Definately seemed to be an NST-induced limit.

The AVI format itself has a cutoff in the 1-2 GB region as well. Either use a compressing codec or a screen capture program.

Alternatively, the program's dead (we've been unable to contact the author for 3 years now) so nobody will feel bad if you use some other emulator.

Has anyone considered breaking this function out of Nestopia so that a large number of NSV files could be converted programatically?

By definition, this function relies on the entire rest of NEStopia. Any NSV file could access any and all elements of the emulated NES hardware, so there is nothing to break out.

I'm using R. Belmont's port of Nestopia to Linux and after I load the NSV, I can't find export to AVI in the File menu. Is there something I forgot when I compiled it?
