64-bit SDLMAME shows the graphics properly on Mac, and all versions show 'em on Windows and Linux.

Dang... I thought I compiled the 64-bit version... but it looks like I'd need Snow Leopard to do that, huh? There's no way to compile 64-bit sdlmame on Leopard (10.5) is there? Even though it is a 64-bit OS?

Leopard is partially 64-bit. You cannot write 64 bit programs that use graphics or audio on it, just Internet servers and the like. Snow Leopard is fully 64-bit capable.
