Some parameters you might try are:

-sdlvideofps (real time stats on the command line)

-video bgfx (use the bgfx video)
-video opengl (use opengl video)
-video soft (software rendering)

(unrecognized parameter for -video will do software, like -video lala)
Invalid video value lala; reverting to software



And bgfx can use opengl, vulkan under linux (interesting it's defaulting to vulkan now) set with the -bgfx_backend parameter.

./mame -showusage | grep bgfx
-video video output method: none, soft, accel, opengl or bgfx
-bgfx_path path to BGFX-related files
-bgfx_backend BGFX backend to use (d3d9, d3d11, d3d12, metal, opengl, gles, vulkan)
-bgfx_debug enable BGFX debugging statistics
-bgfx_screen_chains comma-delimited list of screen chain JSON names, colon-delimited per-window
-bgfx_shadow_mask shadow mask texture name
-bgfx_lut LUT texture name
-bgfx_avi_name filename for BGFX output logging


You might also do -bgfx_debug and it will put some stats on the screen too (including stuff about video driver in the upper left of the screen)

Hurray! The problems have been fixed. It was all due to a mistake in my mame.ini file. Apparently, video=auto is interpreted as video=soft. When I set it to video=opengl all was made well with performance. As for the <system>.cfg files being reverted to the default values, upgrading from 0238 to 0239 fixed that issue. I can make all the changes I want, and MAME remembers them now.

PS: I use NVIDIA's driver at version 460.67
PPS: Thank you to Vas Crabb and Golden Child for pointing me in the right direction to find the root (ha!) of the problem.
