If it runs on Linux with SDL I don't see any reason why it couldn't be ported.
Edit: There is a macosx build in the package already. I am trying to build it.

Clearly this is all over my head, but how many ROMs could this be used with? Is it limited to maze type games, or no?

I built it but the keyboard don't work (or I don't know how to make it work). However I can click-move the mouse to change the view angle.

nicest command-line compile I've ever seen. it actually makes an os x application. the sound is scratchy, but it's on their todo list.
as shortstop said it uses SDL so you need to download and compile the SDL source code first (don't just install the runtime library).
syndicman, I don't know why your keyboard doesn't work, I'm on a powerbook and it works fine.
