As usual the important part of a post on this thread is missed. "as pure FM chips". The 2610 adds ADPCM channels to make up for the fact that the FM side is essentially the same as the 2203. But a 2151 paired with a quality uncompressed sample player (SegaPCM or Namco C140) will beat the pants off a 2610.
The 2612 is the same chip as the 3834. Nobody's entirely sure why it was made under two part numbers.

Could be something as simple as where it was made, maybe the 2612 was the Japanese plants name and the other one was wherever else.
As for the ADPCM players, like you say, a standalone task specific chip is always going to do a better job than a jack of all trades (something I myself am doing something about..)
As for the difference between the 2610 and 2610B its probably just an updated more integrated version of the same chip, like the pstwo is to the ps2.

Well, there's clearly some kind of difference, or MAME wouldn't have separate YM3834 and YM2162 defs, would it?

Not necessarily - MAME's big on accuracy, so we specify the exact part present. In MAME, both defs go to the same exact emulation.
