there are only two possible cases:
1. the build has been compiled with OSD=winui, and then you might need to enable the newui option in MESSUI (there should be an option in the MESSUI ini file too, but I don't remember which one)
2. the build has not been compiled with OSD=winui, and then you cannot access the newui, but you have to press ScrlLock to enable partial keyboard emulation and then TAB is available.

that's simply the way it works, but if you haven't compiled the build by yourself, the procedure depends on how the exe has been compiled...

anyway, trying to be constructive, I will add another answer too: you should keep in mind that MESS is a fast moving project (like MAME), as such there might be regressions from time to time.

as soon as we find them out, we try to fix them, but it's not like we have fun breaking stuff

if you're so happy with the old version, simply keep two separate folder with the two exe (both pointing to the same bios folder) until the new version is fixed and you can safely remove the old one.
